Corn and Tomato Scramble

This is one of my favorite things to make in the summer when the tomatoes from the garden and ripe and fresh! This tomato and corn scramble is really easy to make and is super delicious! It is fabulous as a side, or even on it’s own for a light lunch or snack. It would also be great to bring to your next summer barbecue, everyone just loves it! I have made this dish at different times of the year, but the best flavor you are going to get is from your peak summer corn and tomatoes. If you try any new recipe this summer, this is the one you should definitely go for. It’s so darn good!

Ingredients:

8 Ears of Corn

4 Vine ripened fresh tomatoes

4-5 Green Onions

2TBSP Olive Oil

2TBSP White Balsamic Vinegar

3 TBSP Butter

Salt and Pepper to taste

First slice all the kernels off of the corn cobs, chop up your green onions and tomatoes. In a large bowl mix vinegar, olive oil, and salt and pepper, with a wire whisk, then add tomatoes to the bowl and set aside. Melt butter over medium heat, then add green onions and saute for a couple of minutes until they are tender. Then, add corn to your skillet. Saute corn until it’s just tender crisp, around 4 minutes. Remove from heat, and let cool to room temperature. Then add the corn mixture to the bowl of your tomato mixture. Serve at room temperature, which I prefer, or you can chill and serve it cold. It’s delicious either way! Summer in a bowl! Enjoy!

Pin of the Week- August 2nd

I just love this cool DIY from Better Homes and Gardens. I love the paper they used and I love how they made a collage of them on a wall. It’s even cooler that they covered the books too. BHG on Pinterest has a lot of cool pins and boards. Next time we have a party at the house I know what i’ll be making for decor. Maybe I’ll do one of these collages for christmas too. My Life in Pictures- July 30th

Our gardens are one of my favorite things about our home here in Apex! I love to watch them grow and transform every year. And even though we complain about how much time and work goes into keeping things looking great, it’s beauty like this that makes it so worth the effort! This is one of my favorite spots in our garden, our picket fence, and my huge purple butterfly bush! In the spring and summer there are always an abundance of butterflies and dragonflies around this spot. It’s so lovely!

My Life in Pictures- July 23rd

This past week has been super busy around the house and studio! However, the girls and I were able to get away for a bit, and we took all the pups to Lake Pine for a nice long walk around the lake. I think we all needed it! The weather was a bit hot, but it’s always pretty around the park. I just love all the wildlife they have around Lake Pine as well, and the dogs go crazy for all the squirrels and ducks! It’s a beautiful place, and in the hustle of the city, a near by calm spot where you can take off for an hour and just have fun. And perhaps the thing I love the most about walking the dogs at the lake is that they are nice and tuckered out for the remainder of the day, or at least a few hours.

DIY Pet Portrait Instagram Necklaces

 

Today I have a super cute DIY for you all! I’m going to teach you all how to make these adorable necklaces from your favorite instagram pictures of your pets. This is a super easy craft, and it’s very economical as well. This would be a great craft for a party! You could also make batches of them for holiday gifts for your girlfriends, teachers, dog park friend, etc. If you buy your supplies off of Etsy, you can make these little cuties for about a dollar a piece! I bought all of my supplies from Sun and Moon Crafts on Etsy. You can see their shop here.  So gather your favorite instagrams of your favorite furry friends, and let’s get crafting!

 

Here’s What You Need:

*1″ Clear Glass Tiles

*Amazing Glaze, craft glaze, or decoupage medium( I used Amazing glaze)

*Jewelry Bails

*Cardstock printed with your images

*Chain, Ribbon, or Cording for hanging

*Paintbrush

*E6000

 

Step 1: Print image sheet- In photoshop elements or a photo editing program reduce down your instagram pictures to a little less than an inch(.0875), then drag them onto a blank 8.5×11 page. Once you have all the images you want on your page, save and print. Now gather all your suplies together. Cut out square pictures.

 

Step 2: Apply Photo with Glaze- Apply a thin layer of glaze to bumpy side of glass tile. Then place image face down on glazed side of tile and press and smooth out any bubbles. Let dry.

 

Step 3: Glaze Back of tile- Paint a layer of glaze on the back side of the tile. Let dry.

 

Step 4: Glue Bail- Place a small dab of E6000 in the top middle of the back of your tile. Then firmly press on a jewelry bail. Let Dry. Finish by hanging on a chain or ribbon, and enjoy!

Don’t you just love them! I love being able to wear my favorite gals around my neck! It’s like carrying a little piece of happiness with you all day! Not only is this such an easy craft, it’s also so economical! Definitely a fantastic craft for keeping or for giving! Hope you all enjoy!

I love to craft! When my daughter Ashlee was little I used to sew all the time for her, and now that she’s grown she does most of the sewing these days. I still love to sew and frequently craft with my girls. One of the new things we are all learning to do is crochet. I saw this pin today and just fell in love with the vintage sweetness of these pillowcases! I am now on the hunt for some fabulous fabric to make the cases with and coordinating yarn to crochet sweet edgings to them. Wish me luck! And you can see this lovely pin Here

Tuesday Tip- July 17th

 

One thing I always tell people when they ask how to get great pictures of their children is that you have to relate to them. Don’t be afraid to make a fool out of yourself and get a little silly. Most of the time when kid’s get around the camera they immediately want to slap on that forced “cheezy” smile. Your goal is to make them forget that the camera is there and really start a dialogue with you, and one of the best ways is to be silly, ask them silly questions, or sing silly songs. I frequently sing the “Wheels on the bus” song and change the sounds the animals make like the babies on the bus go woof, and that always gets cute, and most importantly, natural smiles for me. More than anything though I believe that you really have to like kid’s and be able to relate to them at their level to be able to get that perfect personality shinning through. Be silly, but also be really genuine, and you’ll be amazed at the results!
